Rare Character Bourbon - Adelphia Single Barrel "Olympia"

This Rare Character Single Barrel Pick is a 7 year 4 month Borbon Finished in Jamaican Rum Casks.

Nose: 
It opens with dark sweet molasses with a bit of citrus/orange and a little toasted pineapple and dark fruits. There’s an oak note and a little presence of heady ethanol that hints its proof. Very nice. 

Front palate: 
It opens with fresh sugarcane sweetness immediately followed by sweet baking spice. The tip of the tongue holds the spice note. 

Mid palate:
The spice is followed by apple pie, raisins and cinnamon, developing into sweet oak, caramel, and a little bit of chocolate. You know you’re drinking a finished bourbon with a very nice balance between the rum cask and the bourbon, they complement each other’s flavors without overpowering the other.

Finish:
It’s a medium finish. The warmth lingers in your chest and bridges the finish with spice and sweet oak. There is a pleasant drying feel at the end with a bit more of rum cask finish.
